Prep Time: 45 minutes
Ingredients
1 Cup Quinoa
2 Cups Water
1 Can Chickpeas
1 Large Cucumber
1/2 Cup Cherry Tomatoes
Shredded Lettuce
1/2 Onion
4 Tortillas
Instructions:
Step 1: Rinse quinoa in cold water and drain.
Step 2: Place quinoa in a pot with 2 cups of water on high heat until water comes to a rolling boil. Reduce heat to low and cover for 30 minutes or until all water has been absorbed by the quinoa.
Alternatively, you can use an Instant Pot. Place 1 cup rinsed quinoa in an Instant Pot with 2 cups water. Select the option for grains/rice and let sit until cooked.
Step 3: Open and drain chickpeas. In a large bowl, mash them with a potato masher until smooth in consistency or blend them in a blender or food processor. Place blended chickpeas in a bowl and set aside.
Step 4: Wash cucumbers, tomatoes, and onion in warm water to remove any debris or wax that might be present from packaging from the supermarket.
Step 5: Peel cucumbers and cut into bite sized pieces. Place in a bowl and set aside
Step 6: Coarsely chop onion into bite size pieces. Place in a bowl and set aside.
Step 6: Cut cherry tomatoes in half, lengthwise. Place in a bowl and set aside.
Step 7: Wash shredded lettuce in cold water. Place in a bowl and set aside.
Step 8: Once your quinoa is done cooking, remove from heat.
Step 9: With a fork, gently fluff the quinoa by raking the fork through the quinoa.
Step 10: Assemble your wraps and enjoy!
Assembling Quinoa Veggie Wrap with Chickpea Puree
Step 1: With a spoon or fork, generously spread chickpea puree onto the surface of your tortilla.
Step 2: Add several spoonfuls of quinoa over top of the chickpea puree.
Step 3: Evenly place cucumber slices onto the veggie wrap
Step 4: Add a handful of lettuce.
Step 5: Add tomatoes.
Step 6: Add onions
Step 7: Wrap up your veggie wrap as best as you can. Unfortunately, we are not the best at this part, so you are on your own!
