Banh Mi Inspired Vietnamese Spring Rolls


This meal has to be one of our favorites because it is so easily customizable AND it is super interactive, meaning it is the perfect dish to make with your family or at a get together. 

Ok, so disclaimer – the above picture is not the spring rolls that we made. Unfortunately, we are still learning how best to roll different types of food (like our quinoa veggie wraps, for example). 

The good news is, by following this recipe and having just a little bit more artistic ability than we do, you can make spring rolls that will impress even the most intense food critics!

Prep Time: 30 minutes 

Assembly Time: 30 minutes

Ingredients:

2 Carrots

Apple Cider Vinegar

Water

1 Cucumber

1/2 Purple Cabbage

6 Mini Bella Mushrooms 

1 Bell Pepper 

1/2 Bunch of Cilantro 

1 Package of Rice Paper Wraps

Optional:

1 Package of Rice Noodles

** You can very easily customize this dish to include any of your favorite veggies. Feel free to add or omit anything you would like – the key is making sure that your veggies are cut in similar sizes to ensure even distribution throughout the final product**

Dipping Sauce: Sweet and Spicy Balsamic Sauce 

Preparation

Step one: Wash all vegetables in warm water to remove any wax or debris that might be on them from the grocery store. Set vegetables to the side.

Step 2: Peel and carefully julienne the carrots (cut into shapes that resemble match sticks). For more help on this check out this awesome video.

Once both carrots are cut, rinse your matchsticks under cold water. Place in a bowl and set aside. 

Step 3: In a small saucepan bring a mixture of equal parts apple cider vinegar and water to a boil. You want your apple cider vinegar mixture to be enough to cover your matchsticks. 

Step 4: Once your apple cider vinegar mixture reaches a rolling boil, remove from heat and pour over matchsticks. Leave matchsticks to soak while you continue prepping other veggies

Step 5: Julienne cucumber. For instructions on how to julienne a cucumber, click here

One your cucumber is julienned, rinse under cold water, place on a platter or large plate and set aside.

Step 6: Roughly chop your purple cabbage into small, bitesize pieces. Rinse chopped cabbage under cold water and set aside on the plate with your cucumber. 

Step 7: Carefully take your mushrooms and thinly slice or mince them. Rinse your mushrooms under cold water and set aside with your other prepped veggies. 

Step 8: Carefully julienne your bell pepper. For directions on how to julienne a bell pepper, click here.

Rinse your julienned bell pepper under cold water and set aside with your other prepped veggies. 

Step 9: Roughly chop your cilantro, rinse under cold water and set aside on the platter with your other prepped veggies. 

Step 10: Drain carrots and place them on the platter with your other vegetables.

Optional: Rice Noodles 

Bring large pot of water to a rolling boil and remove from heat. Place 1 bundle of rice noodles into the boiling water. Let sit for 3-5 minutes (or until noodles are soft). Drain water from noodles and immediately rinse in cool water to stop the cooking process. Place cooled noodles onto the platter with your vegetables.

Assembly

Step 1: Place warm water into a large bowl. Please note that this water will be used to soak the rice paper. The brim of the bowl must be larger in circumference than the rice paper wraps you are using. 

Step 2: Quickly take the rice paper wrapper and set it into the warm water. Let sit for several second before carefully turning the rice paper roll over to allow the other side to moisten.

Step 3: Remove the rice paper from the water and place flat onto a plate. 

Step 4: Begin assembling your spring roll by placing your desired vegetables inside.

Step 5: Once your spring roll is filled, carefully wrap your spring roll. If the rice paper is tacky to the touch, try wetting your fingers. This helped us to better wrap your spring roll.

Step 6: Enjoy the spring rolls with your favorite dipping sauce! We recommend our Sweet and Spicy Balsamic Sauce.
