Pineapple Fried Rice

This tropical take on fried rice will brighten up any day and leave you feeling refreshed while reminding you of your last tropical vacation or trip to the beach. 

Also, this dish is completely customizable and can include any number of ingredients that you already have. It does require a little bit of prep time, but the result is worth it. 

Plus, it is full of fruits and veggies

Ingredients

1 Fresh Pineapple

1.5 Cups of White Rice 

2 Large Carrots 

5 Radishes 

4 Mandarin Oranges 

3 TBSPs Olive Oil

Instructions

Step 1: Measure out 1.5 cups of rice. Place rice in a bowl or a pot and cover in cold water. Using a spoon, stir rice to remove any excess starch. Drain water and repeat 2 times. 

Step 2: Place the washed rice in your Instant Pot. Add 1.5 cups of water. Attach lid to Instant Pot and select the setting for rice. Let sit until the Instant Pot signals that the rice is cooked. 

** If you do not have an Instant pot, you can make the rice on a stovetop. Place washed rice into a pot and add 3 cups of water. Place the pot of rice over a burner at high heat until the water reaches a rolling boil. Once water reaches a rolling boil, reduce heat to low, cover pot with lid, and let sit for approximately 30 minutes or until the rice absorbs all of the water. **

Step 3: While rice is cooking, begin prepping all vegetables

Carrots:  Using a potato peeler, peel carrots and then wash in cold water. Once carrots are washed, cut the carrots into bite sized pieces. Place in bowl and set aside. 

Radishes: Wash radishes in cold water. Cut radishes in half and then slice into bite size pieces. Place in a bowl and set aside.

** You want your carrot and radish pieces to be approximately the same size to ensure even cook times. **

Mandarin Oranges: Peel oranges. Using your hands, separate the oranges into wedges. Place in bowl and set aside. 

** If you do not have fresh oranges, you could also use canned oranges. They taste just as great, but the texture is a little softer and will break apart in your rice. **

Pineapple: Place pineapple on its side on top of a cutting board. Take a sharp knife and carefully cut the pineapple in half (lengthwise).

 With the knife, carefully begin cutting the meat of the pineapple away from the husk. Use a spoon to scoop the meat from the pineapple leaving the hollow husk. Set the 2 pieces of hallow pineapple husk to the side. Do not throw the husk away as you will use it later. Take the pineapple meat and chop it into bite size pieces. Place in a bowl and set aside. 

Step 4: Once your rice is cooked, remove the lid and fluff with a fork by raking your fork throughout the rice. Take rice off the heat and let cool.

Step 5: In a large pan or cast-iron skillet, add 3 TBSPs of olive oil. Place over medium-high heat allowing oil to heat up.

Step 6: Add carrots and radishes to oil and allow to cook flipping occasionally to avoid charring. 

Step 7: Once radishes and carrots begin to soften, add half of your pineapple into the frying pan. Cook on medium high heat for 5 approximately 5 minutes. 

Step 8: Add rice into frying pan, mix well to evenly incorporate fruits and vegetables throughout the rice. Let rice mixture sit over medium-high heat for 10 minutes to crisp, flipping occasionally to avoid burning. 

Step 9: Add mandarin oranges into frying pan, mix well to evenly incorporate fruits and vegetables throughout the rice. 

Step: 10: (OPTIONAL) Add in our Sweet and Spicy Balsamic Sauce to bring the whole dish together. Pour sauce over fried rice and stir to evenly mix the sauce throughout. 

Step 11: Spoon fried rice mixture into your pineapple husks, serve and enjoy.
