“One Pot” Black Beans and Rice

They say that the best life is a simple one – and sometimes that translates to food as well. This simple and rustic recipe requires minimal effort, very little cleanup, and leaves you with a meal that will warm you up and sustain you during those cold mountain nights. 

This meal has become a staple in our diet because it is incredibly filling, cost effective, and reminds us both of comfort foods we would indulge on growing up. As a plus, it can be made out of staples that most of us already have in our pantry!

 Ingredients

½ Onion 

1 Can Black Beans

1 Can Diced Tomatoes and Green Chiles (We prefer Rotel)

1 Cup Rice

Seasoning

Dried Cumin

Salt

Pepper

Instructions

Step 1: Measure out 1 cup of rice. Place rice in a bowl or a pot and cover in cold water. Using a spoon, stir rice to remove any excess starch from the rice. Drain water and repeat 2 times. 

Step 2: Place the washed rice in your Instant Pot. Add 1 cup of water. Attach lid to Instant Pot and select the setting for rice. Let sit until the Instant Pot signals that the rice is cooked. 

** If you do not have an Instant pot, you can make the rice on a stovetop. Place washed rice into a pot and add 2 cups of water. Place the pot of rice over a burner at high heat until the water reaches a rolling boil. Once water reaches a rolling boil, reduce heat to low, cover pot with lid, and let sit for approximately 30 minutes or until the rice absorbs all of the water. **

Step 3: Wash onion in cold water and then dice into small pieces. 

Step 4: Carefully open cans of black beans and tomatoes with green chiles. Drain juices from both cans. 

Step 5: Once your Instant Pot signals that your rice is cooked, remove the lid and fluff with a fork by raking your fork throughout the rice. 

** If you do not have an Instant Pot, once you have put your rice on the stove over low heat to cook, place drained black beans, diced onion, and cumin into a separate pot over low heat. Allow to simmer while the rice cooks. **

Step 6: Add black beans, tomatoes and green chilies, and diced onion into your Instant Pot and thoroughly mix all components with a fork until evenly combined. 

Step 7: Add 1 teaspoon of cumin to your black beans and rice mixture, stir in thoroughly. 

Step 8: Cover Instant Pot with lid, let sit on medium heat for 20 minutes, stirring occasionally. 

** If you do not have an Instant Pot, once your rice is done cooking and your black beans have warmed over low-heat, you can assemble your dish by adding rice into a bowl, covering the rice with black beans and then garnishing with the tomatoes and green chiles. **

Step 9: Season to taste with salt and pepper. Serve and enjoy!
