This refreshing tomato and cucumber salad has quickly become one of our favorite meals to help us beat the heat on a hot summer day. It is a quick and easy recipe that can be prepared in about 15 minutes that is perfect for a quick lunch, a side dish at a cookout, or for those times that you don’t really feel like cooking.
Prep time: 15 minutes
Ingredients
1 cup cherry tomatoes
2 large cucumbers
Pinch of Salt
Pinch of Ground Black Pepper
Garnish: Mint Leaves
Instructions
Step one: Wash cucumbers in warm water to remove any wax or debris that might be on them from the supermarket.
Step 2: Peel both cucumbers.
Step 3: Wash Cucumbers in cold water to remove any excess skin that might remain after peeling.
Step 4: Cut cucumbers in half (lengthwise) before cutting them into bitesize semi-circle pieces. Put in a bowl and set aside.
Step 5: Wash Cherry tomatoes.
Step 6: Cut cherry tomatoes in half and place in a bowl.
Step 7: Drain excess juice from cherry tomatoes.
Step 8: Using a wooden spoon, gently combine cucumbers and cherry tomatoes in a large bowl.
Step 9: Salt and pepper to taste and garnish with mint leaves.
Step 10: Enjoy
Add a little extra flavor to this dish by adding a delicious sauce!
You can add a few tablespoons of your favorite salad dressing or try our homemade vegan ranch dry rub mixed with a few tablespoons of water.
