Vegan Blackberry and Peach Crumble

It is the end of blackberry season here in the Pacific Northwest and we were lucky enough to camp in an area surrounded by hundreds of wild blackberry bushes.

Teaming up with some friends, we decided to try our hand at foraging. After about an hour of work, we were able to collect a couple of pounds of fresh blackberries.


Trying to put those blackberries to good use (as well as wanting to take advantage of our friends’ oven) I came up with this quick and easy dessert that is sure to please even the harshest of food critics!

Prep Time: 10 minutes
Cook Time: 40 minutes

Makes 8 Servings

Ingredients:

For the Filling:
2 Can Peaches, Chunked
4 Cups Fresh Blackberries
2 TBSP Lemon Juice

For the Crumble
1 Cup Rolled or Steel Cut Oats (Do not use instant oatmeal)
1 Cup Granola
1 Cup Brown Sugar or coconut sugar
2 TBSP Ground Cinnamon
Pinch of Salt
2 TBSP Coconut Oil at Room Temperature

Step 1: Preheat oven to 350 degrees

Step 2: Wash blackberries in warm water to remove any debris. Set aside.

Step 3: Open and drain both cans of peaches.

Step 4: In a medium-size pot, combine blackberries, peaches, and lemon juice. Using a spoon, mix ingredients until they are evenly combined. Be careful not to bruise the blackberries while doing this.

Step 5: Once the berries and peaches are evenly mixed, put them on the stove over medium-low heat. Let simmer for 20 minutes, stirring occasionally.

Step 6: While the fruit mixture is cooking down, begin working on the crumble mixture by combining the oats, granola, sugar, and cinnamon into a large bowl and mixing until evenly combined.

Step 7: Add coconut oil into crumble mixture. Combine with a fork until the oil is evenly distributed.

Step 8: Remove berry mixture from heat and drain any excess liquid if desired.

Step 9: Evenly spread crumble mixture over the berry mixture.

Step 10: Place in preheated oven for 15 minutes or until the topping is golden brown

Step 11: Enjoy

Fall is here and there is no better way to  enjoy it than to whip up a nice batch of VEGAN blackberry and peach crumble!

** If you are living on the road, you might not have an oven, but that doesn’t mean you cannot enjoy this dessert. To make this dessert without an oven, substitute rolled oats for a cup of granola for the crumble. Instead of finishing this dessert in the oven, place the dessert, uncovered, on a stovetop over low heat, and let simmer for 10-15 minutes or until the liquid begins to bubble through the crust. **
